Cold in Paris



Feeling cold? We have a cold spell in Paris which lasts since the Holidays. So the mood is for warm hearty dishes like the one I made yesterday.

You need
1 lb white dry beans
2 carrots, sliced
1 onion, shopped
1 thick slice of bacon, chopped (lardons)
1 lb pork meat
1 can of Italian tomatoes, diced (no additives)
2 cups home made stock or water
1/4 cup vegetable oil (I used duck fat)
sea salt and pepper to taste
enough water to rehydrate the beans
Heat the fat in an iron cast pan. Add the sliced carrots, chopped onions, and lardons (bacon). Let brown over medium heat. Add the pork, let brown stirring regularly.
Add the beans and the stock. Turn over medium high heat. Add the bouquet garni, sea salt and pepper. Let the beans absorb the stock. Then add the tomatoes stirring well.
Add more water. Dry beans absorb more or less water, so you have to keep an eye on the beans. If they absorb too much water, add some more.
Rectify seasoning.
The beans are ready when they are soft, about 40 minutes.
Serve very hot. You can serve a salad as a starter and you have a perfect full meal!
