Trying out Tanous
In my village, we have a small grocery store that sells an amazing variety of products. Last weekend I was able to snatch up the last two bunches of tanous, the local name for this green, leafy vegetable. It is also called l'asperge des pauvres, or poor man's asparagus. I suspect its name differs depending on the region.
I had never tasted it, and cooked it according to the shopkeepers' suggestions: trim the base, cook the leaves and stalks for 10 minutes in boiling water, serve lukewarm with vinaigrette.
The result was tasty, yet my family agreed that any resemblance to asparagus was greatly exaggerated. It tasted more like Swiss chard.
Do any of my readers know the official name of this green, in French or in English?
