Good stuff, Maman!


The other day my eldest daughter popped into the kitchen and exclaimed: "On mange du bon ce soir!"-- roughly translated: "We're eating good stuff tonight! " You may wonder what delicious French specialty I was concocting, but I am rather sad to say that I was dumping a pile of frozen pommes de terre dauphine in a baking pan. Few side dishes elicit as much enthusiasm from my children, and I must admit that these golden brown potato puffs are something of a treat. Dauphine potatoes consist of mashed potatoes mixed with "chou paste", the same type of dough used for cream puffs,rolled into balls and deep fried. Cookbooks contain recipes for them, of course, but I have never known anyone to make them from scratch!
